Food has an incredible ability to transcend boundaries. It is the fabric of my upbringing. Food encourages dialect that wouldn't have happened otherwise. It is nurturing, and encompasses love, culture and fellowship without restraints.
Here in New Orleans, Food is a tradition in its own right. As a Traveling Private Chef, my core mission is to share with the world the essence of creole cuisine- which lies in its ability to nourish both body and soul by bringing people together and creating lasting memories.
During my childhood, in the earlier parts of the 1990's, Sundays were the highlight of my week. We would dress in our Sunday best, attend church and head to my grandparents house which was our Sunday landing spot. Aunts, uncles, cousins, extended families, and friends all knew that Granny’s house was the place to be on Sundays! You'd enter to the likes of Patti LaBelle, Anita Baker, Earth Wind and Fire, Isley Brother playing from the stereo which sat on the Bakers Rack in the kitchen.
Granny was always in the kitchen and you could mainly find Grandpaw in the outside garden patio room where granny grow an elaborate garden mostly from scratch and clippings. It was also where we hosted our crawfish and crab boils and easter egg hunts! -or- you could find him on the stoop supervising the cousins as they jumped (repeatedly) from the stairs onto the grass leaving a permanent bare spot in his perfectly manicured St. Augustine grass. He didn't mind much! But needless to say, my paw paw loved his grandchildren
While my cousins would enjoy free rein of the house to play hide and seek, I would find myself drawn into the kitchen smelling the aroma of her deep - coffee like roux cooking into a paste or the sweet, nutty smell of the Creole Red Beans cooking down with some fresh made andouille, bay leaves and smoked turkey.
When it was time to commune, Everyone would drop what they were doing immediately, gather at the beautifully set table, bow their heads and pray. We would pray for our coming week or if there was someone unwell; Prayer came before every meal. During prayer, I would sneak a peek and glance around, noticing the anticipation that filled the table. It was palpable. The food would spread the length of the table from one Head of the table to the next . The Head of the table position on some Sundays went to whoever we were celebrating. Whether it be a communion, Birthday, a new life event; we always found a reason to celebrate!
"This began my deep-rooted love and connection to food and dinner parties."
After dinner there was always a little lagniappe, "something extra added". It was either a rum and raisin Bread pudding, Watergate salad or a Black Forest Cherry Trifle in a beautiful footed Trifle China dish. Through shared meals, we celebrated milestones, we comforted one another, we celebrated both life and death and built stronger communities as the dishes went on. This began my deep-rooted love and connection to food and dinner parties.
When I refer to Delish NOLA, I intentionally use the pronouns Us or Ours because there are so my people who have influenced, inspired and supported me throughout our 13 year journey! I lost my grandfather a few years ago but his encouragement still lives within me. He was a man of very few words but his expressions said it all. I knew how proud he was of all that I have accomplished and continue to accomplish and I dedicate all of my success and future successes to him and my Grandmother, as their home on Sunday Evenings fostered me into the woman I am today.
For thirteen years, we've had the privilege of bringing families and friends together, creating unforgettable culinary experiences that has left lasting memories for us all.
